Crispy Plantain Cups with Guacamole & Spicy Creole Shrimp

Ingredients Needed:

  • 2 large green plantains (bannann peze cut into 1.5-inch cylinders)
  • 1 lb jumbo shrimp, peeled and deveined
  • 2 tbsp Lenie® CHILIGU All-Purpose Spice Blend
  • 2 ripe Hass avocados
  • Juice of 2 fresh limes
  • 1/4 cup red onion, finely minced
  • Fresh cilantro, chopped
  • Neutral avocado or coconut oil for frying
  • Pinch of sea salt

Step-by-Step Instructions:

    Toss the shrimp with 2 tbsp Lenie® CHILIGU spice and 1 tbsp lime juice; allow to sit for 10 minutes.

    In a deep skillet, heat oil to 350°F. Fry the plantain rounds until soft inside but pale (about 3-4 minutes).

    Using a citrus squeezer or tostonera cup mold, gently press the warm plantains into cup shapes.

    Return the cups to hot oil for 2-3 minutes until golden and delightfully crunchy. Drain on paper towels and lightly salt.

    Mash avocados with lime juice, minced onion, chopped cilantro, and a pinch of Lenie® Garlic Seasoning.

    Quickly sear marinated shrimp in a hot skillet for 2 minutes per side until pink and charred.

    Spoon guacamole into crunchy plantain cups, top with warm shrimp and a drizzle of Cheta hot sauce.
